Taimen is the largest and most valuable member of the salmon family. It lives in fast and cold Northern rivers of Russia.

The norther it goes, the more comfortable it feels. Taimen is an ideal predator. It is large, non-competitive owner of the reservoir. Taimen hunts not only on fish, but also on small animals that swim across the river, as well as birds that come to drink.

Taimen is tender and succulent, with a complete absence of intermuscular bones. A characteristic feature of taimen is the accumulation of fat between the muscle fibers, which creates this indescribable taste, which can be hardly expressed in words!
